The nasal U is pronounced [euh(n)], where [euh] is pronounced more or less like the oo in good and (n) equals the nasal sound. The nasal U can be spelled un or um. Either way, this sound is called the nasal U - you can see its IPA symbol here.

Note that this sound has disappeared in some French dialects - it is often replaced by the nasal I.
